Hickory is nasty for most things. Then again, "traditional" California BBQ often uses red oak, which is nasty. I have about a lifetime's worth of English walnut these days -- mild, but good. I'll rack the walnut sentiment. Kicked out one of the best Big Birds I ever smoked with that wood....
