Fun with Chocolate

Just created a new Chocolate sensation!!!
On request from Hubby for something a little different than what was available in standard commercial chocolate
I melted down
4 x 200g blocks of 70% cacao dark chocolate
with 2 tablespoons coconut sugar,
1 1/2 tsps orange essence,
the zest of two large oranges and
1 teaspoon coconut oil
in a double boiler then added 240g of hazelnuts which I toasted then roughly crushed with a mallet , spread out on a baking paper covered cookie sheet, placed in the fridge for a couple of hours then broke it up into large chunks to keep in a sealed container in the fridge for future consumption & OMG it is so good!!

Do you start with unsweetened chocolate?

I see you're adding "coconut sugar" which I'm not familiar with, but 2 tbs seems like not much to sweeten that much chocolate.

Image coconut sugar isn't as sweet as regular sugar but has a really nice toffee flavour, I only use a small amount to balance the bitterness of the orange essence
I don't use a cooking chocolate for this but a 70% cocoa eating chocolate, that is bitter-sweet
