Rack the PET.

We bake wings as well.


One side we make to go with them are sweet potato chips. Slice a sweet potato very thin, toss in a little olive oil. Spread slices out on a broiler pan and then sprinkle with cracked pepper and sea salt. 5 minutes in a 450 degree oven. Pull them out and flip each chip over. Again sprinkle with pepper and sea salt. This time also sprinkle with some crushed red pepper flakes. Back in the oven for another 5 minutes and they are go to go.

Nice. What's pheasant like? It looks a little duck.

One small tip. Ditch your pepper and buy tellicherry peppercorns and a grinder. Yes, it makes a difference. You'll thank me.

Nice gift. Highly doubtful most folks here have ever heard of Blue, let alone can afford it, have had the opportunity to sample it and could actually give their opinion on it.

Excellent.

Just looked it up -- in our state-run booze mess, it runs $230.

A little steep for me.

Been a long time since I had pheasant (I don't hunt, but know a few who do). About like other game bird (greasy-ass nasty duck and goose doesn't count). Pretty tasty.

If you cook duck right and render out the fat it can be pretty damn good.

Never cooked it myself but enjoyed it a lot a few times.

Pheasant is basically a wild chicken with really nice feathers- originally imported here from china. You can probably figure out from this what it tastes like.

BTW -- I didn't mention here that 3 weeks or so ago, the NSLW's roommate came back from pheasant hunting (other side of the mountains, in wheat farms, not that plentiful around here), and had 3 freshly cleaned birds. Even his lifelong-pheasant-hunting-ass was surprised how non-gamey it was.


Just seasoned and baked.
