Damn, that sounds pretty good right now. I have a couple of smoked salmon fillets that relatives in Seattle sent for Christmas. This sounds like a good way to use some of it.

Do you use fresh spinach, or the chopped frozen stuff?

I LOVE pate a choux. So easy, so impressive. I have a recipe for whole grain pate a choux that is supposedly really, really good. I might try it soon.
