been making gumbo/Roux for years. Never seen anybody mix in the trinity (Onions, Peppers, Celery) before the flour. In fact the high heat of the roux is what cooks the veggies. Replace the butter with bacon grease, then add the flour, then the trinity and I believe you're on to something.

The bacon wrapped and grilled is close. I use a thin, Center cut bacon, and the juxtaposition of flavors is outstanding. I'm sure prosciutto would have that same effect. I'd go with a cold application of the 'gus. Like a lightly pickled spear. Or par-boiled, wrapped, then chilled. And Rack 5th Dimen...

Bacon wrapped and grilled. Out-Fucking-Standing. Battered (tempura), fried, and topped with a lemon-butter Crab topping and parmigiano-reggiano. MONEY! Par-boiled, then a quick pan sear with EVOO, Garlic and lemon juice. Then topped with Sel Gris. Quick, easy, and awesome! Those are about the only w...

Great news ken. Now if we can just get you to read labels on meat you're all set. ( I know you didn't buy it...)

Flank steak really does make a difference. I realize you can slice the meat thin, but it doesn't get the same level of flavor.

You're on the right path, though.

If Dallas packages their 1st rounders to move up, it sure as hell isn't going to be to draft a running back. Dallas is in great cap shape, and they've got a 3rd stringer, Tyson Thompson, with a very similar style to Julius Jones. Barber gets locked up long term well before the draft, Jones is made a...

Well that certainly sucked... Had some personal issues to attend to, or I would have taken my lumps earlier. I wouldn't go as far to say Romo choked, he certainly didn't perform at his best, but Choke is a bit harsh. His passes that were dropped weren't his fault. Bash T.O. all you want about him cr...

A few Stats for you dongslurpers to remember. Romo is 3-.5 against the giants. The .5 coming in his first NFL action when he replaced Bledsoe at the half. The Giants have only beaten 2 Playoff teams the entire season. The Redskins (first meeting) and most recently the Bucs. Put that into perspective...

Try the ecco La Pasta, or at least look for it in a store. You dump the whole pack in the mixing bowl, ad 3/4 (if I remember right) water, mix, set, and roll/extrude. It really was simple stupid. My next step is to start weighing ingredients instead of measuring. I just need to hook myself up with a...

One of the difficult aspects of beating a team 3 times in a year (something the Cowboys have never done) is coming up with something the opposition hasn't seen before, and still dancing with who brung ya. With a semi healthy T.O. and Terry Glenn, they'll have exactly that. Something new to add, yet ...

I wouldn't discount the importance of getting some timing between Glenn and Romo back. With Owens on the Shelf "week-by-week" it's going to be important to get a receiver who can draw the double team. Crayton, Hurd, and Austin are all fine #3's. But not much more. Crayton has done a superl...
