I have a Henkel's Professional S knife set with the santoku and bread knives added. I LOVE the santoku but find I often miss the weight of the chef's knife when I'm using it. Thus my very real desire to have the chef's knife with the graton edge.
Best of both worlds! :D

I use a modified Tyler Florence recipe. Not sure how many you're cooking for, but in the small pyrex dish I use, I can get 3 filets in pretty easily... 4 if I really sqeeze. You could use a bigger baking dish and fit as many as you want, you'd just need to increase the couscous and water to fit, and...

I actually only have 2 Calphalon pans, and both are nonstick. One is the anodized variety, and the other is a cheaper coating-type nonstick. The stainless/non-anodized Cuisinart/Calphalon fully clad pans don't have dark interiors. They're just stainless. Those are the ones I use 95% of the time. I l...

all clad is much better than calphalon, IMO. i've managed to buy a few all clad pieces over the years and they are really fantastic. calphalon has never really impressed me that much and i really hate the dark interiors since it casts bad light on the cooking surface of the skillet/pan/whatever. As...

Have fun!! One more thing... When possible, make sure your stove-top cookware is oven-safe. Just remember that the handles get really hot when you do that. Oops. OH! and also... if you have a chance, try a restaurant supply. I haven't used one for cookware, but apparently it's the best place to get ...

My stainless set: Cuisinart Multiclad triple ply stainless. KICK ASS cookware. I LOVE it. It heats very evenly and is just plain SOLID. Beware the fully-clad pans: they are HEAVY. I also have 2 of Cuisinart's slightly lesser line, I don't recall the name... it's nice stainless cookware, with only th...

Oh sure. Bring up the mod thing, while the wounds are still fresh. Seriously though, being that I rarely order nachos (if ever?), I have no idea what the nachos at my friend's place have that make them special. I do know that there is SOMETHING, though. Their chef likes to play with stuff and put un...

If I do order nachos, one of two things is going to happen -- I'm going to ask about the origin of the chips first , or I'm sending them back if they have the nerve to serve me warmed up chips from a bag. It's a good thing you like being single, princess! Do not doubt my resolve on this matte...

My friend's new restaurant uses Have'A Chips for their nachos. Just thought I'd share. RACK them for their excellent taste in tortilla chips. Are you people smoking crack, or just trolling? 'Round these parts, we also have an outfit that uses prepackaged chips for their nachos. It's called 7-11. Ou...

Kitchen essentials! Yes! HH has a great list. Mine will be a lot like his. Stand Mixer #1 most-used kickass item in my kitchen. Then I come home and see that some moron that lives down the street pushed all of his grass clippings into the middle of the street. Pick that shit up, ya lazy fuck. I have to admit it. I have stopped developing (much) on my mac. Since my contract job turned into actual employment, I decided they should provide me with a computer so I don't have to continually wear mine out for them. I got a PC laptop and I gotta say... it's pretty great. It could be that it's b...

RACK Mikey. The ball and strike count isn't even an official stat, as far as I know. Also, a foul ball is dead if it hits the ground out of bounds, as long as it's past the bases or it stops moving altogether. A foul ball is live if it's caught until the ball is returned to the pitcher and the play ...

Please tell me the person who wrote this -- Determining what you drink based on what others think is 'gay' is about as gay as it gets. lovebuzz, do you have a recipe or are you just tossing chocolate in until you like it? If I see your recipe, I might know better how much you should add. When I've made it in the past, I used cocoa, not chocolate. The whole pot only called for 1 tbsp. of cocoa, but it also called for 1/4 tsp. cinnam...
