Sous vide

Anyone rocking one of these like the Anova? I picked up the bluetooth version. Made some beef and salmon with it. Awesome results.

Never seen one, though I've certainly heard of this cooking method.

I get a lot of enjoyment from the carcinogens (and carmelization) produced by grilling, though.

So first of all sous vide hear has nothing to do with grilling. Second, humans have been cooking with and on fire for a long long time. I'd worry a lot mora about all the extra stuff you get with manufactured food than about a little bit of grilling of fresh veggies and meats.

That's why I mentioned that I like grilled meat. Slow cooking in a damp environment makes stew.

Though I could maybe imagine using this method on a steak, getting it up to a perfect medium rare and then quickly searing the outside on a very hot grill or pan. However, I can cook a perfect steak in 10- 12 minutes on the grill, so I'm not sure I want to spend an hour cooking one in hot water.
