I bought a wok

Thing is BAD ASS. Best purchase I've made in forever. I use it every day. I've been making chicken stirfry for the most part, here's the ingredients I use:

Snap peas
Green beans
mushrooms
red pepper
stir-fry mix of broccoli, carrots and snow peas

SAUCE:
1 tbsp corn starch
2 tbsp soy sauce, sherry
1/2 tbs salt

put heat on very high, add 1 tbs canola oil

throw chicken in first, don't touch for first minute, then stir. let cook for about two minutes.
throw in stir fry mix, then peas and green beans, then mushrooms and peppers. Cook about 6-8 addl minutes.
Then throw in sauce, stir for a minute or two, then serve.

Pretty good stuff, though I think I'm going to cut the sauce in half soon.

Any tips? How can I make my stir fry better? What else do you pole smokers use your wok for?

Woks are common over here.

They sell packaged wok meals at the grocery store.

Couldn't be difficult cooking if you're doing it.

Woks are common over here.

They sell packaged wok meals at the grocery store.
Do they sell the round bottom woks in Holland or the flat bottom ones?

The first thing that comes to mind is that you aren't stir frying. You need a commercial grade range to get the necessary BTUs or wattage and a high carbon steel wok to get a proper stir fry. Even the top of the line home "professional" ranges fall short of that kind of power.

You are going to need something like this to get that kind of BTU output.

That will give you the commercial grade blowtorch you need to do a proper stir fry, crab boil, homebrew etc. You can fry a turkey in it or a whole mess of fried chicken all kinds of shit.

My electric cooktop definitely doesn't have the juice for a proper stir fry. Saute, yes. Stir fry no. That's why I leave it to the restaurants.

The stove at home has a "turbo" burner (gas). And it's barely adequate.

And the turkey fryer indeed has a multitude of uses (a friend bought one at Harbor Freight for like $20 a few years ago. Costs around that to fill it with peanut oil.

And many, many a Dungeness crab has met his end in it.

Used to do a lot of Woking, but, as has been said already, you really do need a flamethrower of a gas range to do it proper. My electric flaptop just doesn't cut it. May just have to go buy a turkey fryer kit and get the wok out again.
