In the tradition of naming curries after places in India, I've decided to call it the 'Bacon Dominion©', even though Canada is not in India - although you would be forgiven for thinking you've suddenly teleported into the middle of Calcutta if you attempt this yourself.
Fry up a load of chopped bacon with garlic, onions, garam masala powder, lemon juice and a tin of patak's vindaloo sauce*.

In a separate frying pan, fry up a load of chopped mushrooms and stick some rice in when the mushrooms are crispy and the oil has gone all mushroomy. Mix it all up together and you have The Bacon Dominion©!
If you're not a big rice fan, serve sauce with french fries.
