Not firing up the smoker today but I just started marinating some carne asada, which I'll be grilling later.

(Did I post this somewhere already? If so...too bad. :oops: )

I've tried a few store bought carned asada marinades lately but mostly they're sweet and taste like variations of bbq sauce.

Nothing beats the tried and true recipe.

fresh lime juice
garlic squeezed through a press
ground cumin
chile powder
salt to taste
EVOO
a bunch of chopped up cilantro

Mix it all together and pour into a plastic bag with some flap meat steaks cut up into manageable pieces. Flank steak or skirt steak work just as well.

Add a few halved and seeded jalapeños and roll it all around to make sure all the meat is exposed to the marinade. Squeeze the air out, seal up the bag and refrigerate for 3 or 4 hours at least. Get your grill really hot and grill it up meduim rare (only a couple of minutes per side if your fire is hot). You want the fire nice and hot so the outside gets well grilled but the inside doesn't turn into shoe leather. Grill the jalapeños to serve on the side if you want.
