Easter Dinner

Easter Sunday has traditionally been an occasion to get at least some of the extended family together for a nice dinner. This year we'll probably be serving anywhere from 9 to 14 people. 9 is most likely.

Here's what I've got planned so far:

Two boneless legs of lamb, grilled on the Weber rotisserie.

Grilled asparagus.

A big green salad made with baby lettuce from the farmers' market plus 'choke hearts, tomatoes, cukes, red onions, sliced pickled beets, feta cheese, kalamata olives and maybe some pepperoncinis. The dressing is a special mixture of Good Seasons Italian made with EVOO and red wine vinegar combined with the house dressing from Pat & Oscar's, a local restaurant that bottles their excellent dressing.

Hummos and pita bread.

Rice, or maybe roasted red potatoes.

Strawberry shortcake (see the strawberry habanero preserves thread).

Any ideas of other good things that would go with this spread?

That sounds fantastic.

I'd add Tzatziki (sp) but you won't be hurting without it and honestly your menu just as it is looks fantastic.

I haven't decided what I am cooking yet, I just know that I am cooking... and that dessert was already determined to be strawberry shortcake 2 days ago.

I might make a roast chicken, some parmesan mashed potatoes, roasted carrots and parsnips, and a salad. If I get super fancy I might throw in a homemade focaccia, but since there are only two of us, that might be a bit excessive.

I haven't totally settled on the menu yet. I don't want anything fancy necessarily, I just want something GOOD.

Now, why would you go and mess up such an epic sounding sald with beets?

Actually, a small amount of the pickled beets (small pieces) adds a nice sweetness to the occasional bite.

Aside from the beets, the salad sounds most yummy. There is something to be said for leaving "controversial" salad ingredients on the side, unless you know the tastes of everyone eating it. While I groove on chopped pepperocinis in salad, I know there's plenty of people who don't. And so on...

Yeah, I could eat 'cinis all day long but the wife and daughter will pick them out of a salad even if they they're chopped up small.
