Artichoke Cassarole

I've gotten so many good receipes- figured it was time to share one. Very tasty and very easy

Made this for the first time today- came out fantastic- and healthy too. Made it with some Salmon steaks and grilled shrimp- mmmmm

3 lbs artichoke hearts (You can buy a 3lb can- but I use the glass to avoid that metallic taste)
1 cup chopped Kalmata Olives (I get fresh ones, pit them and cut them myself. Fuck the canned/jar stuff)
1/2 cup parmesan chesse (Spaghetti cheese)
1/4 cup bread crumbs (I use whole wheat bread crumbs)
1 Tablespoon minced garlic
1/4 cup mayo (I use light Dukes, almost no Sat fats)
Fresh Basil- about 8 leaves- chopped

Pour artichoke hearts into strainer and rinse with water- gets rid of the excess oil or brine (depending on what they are soaked in)
Combine all ingredients into a large bowl and mix well.
Chill in refrigerator for an hour.
Place into a shallow baking dish and bake at 350 for 30 minutes.

Made this for a Cook Off here at work today- 2nd place out of about 25 dishes.
