Good morning for some Zakk ...



This is the latest I posted a SRC in years.
2 weeks in and I still have fully kicked this
damn bug yet so sleeping a little seemed
like a good thing to do this morning.

Too cold for grill biz today, and not feeling
up to it anyways. Gotta get a few honeydo's
accomplished though and looking forward to
the games later today. Chiefs need to handle
the 'duhs and take care of their own biz before
worrying about any of this other convoluted
bs the league has concocted.
Arrowhead West will be full of red today.

believe have been made worthy of discussion here

Not much on tap for me today. Bring some firewood to the front porch... start fire 3pm or so, make a cocktail, and relax fireside. Already feeling like some eggs benedict for dinner. Wish there were still some CF bowl games to watch this weekend, but oh well.

In.

Pulling down the Christmas decorations today. We always keep them up until the first weekend after the 12 Days of Christmas which is the start of Epiphany.

More rain is predicted this afternoon so hopefully I can get the roof and gutter lights down before that happens.

Wife is working today and tomorrow so it's just me and the boys holding the fort down. So far wife hasn't texted me with a list of things she thinks is urgently needed to get done including getting the boys out of the house and into chaotic over priced underage casinos known these days as "arcades."

Probably take them bowling instead.

Anyway, happy weekend.

About to head out for my weekly farmers market run. Going to skip Costco this week because we don’t need anything there.

I’ll pick up a roasting chicken today and fix Marcella Hazan’s roasted chicken with lemons. This is about the simplest but most incredible way to cook a chicken that you will ever try.

Excellent choice. You will be very pleased with the extra real-estate. Perfect cooker for a couple of burgers and dogs, or to go long, low, and slow on pork butts or a brisket. Be sure to grab a Weber chimney (never use lighter fluid), some Weber Igniter Cubes, a few small bags of wood chunks of different flavors and some good charcoal. Im not sure exactly what your selection will be, but I have used a few different Mexican charcoals that were decent. The only issue I had, was most were mesquite, which is one of the harshest of smoking woods.
I also prefer to use lump charcoal over briquettes most of the time. Lump has much less ash, and produces higher temps with less fuel. Jealous Devil is a great albeit pricey choice, but my goto is anything made by B&B. All of their products are excellent.

Nothing beats this recipe.
That looks pretty good but WAY too much work, not to mention the cleanup. The recipe I linked has four ingredients (chicken, lemons from my tree, salt and pepper) and one roasting pan. Ten minutes or so to prepare and a little over an hour to roast. It’s been considered a classic of Italian cooking for decades (try Googling Marcella Hazan).

I’ve made eggplant parm before (not chicken) and it came out OK, but a whole lot of work. I’m pretty good at cleaning up as I go along but, even so, by the time I got it in the oven the kitchen looked like Capitola Beach after a bomb cyclone passed through. I prefer to leave those kinds of dishes up to the restaurant chefs who have somebody to do the cleanup.

I’ll probably be roasting some fingerling potatoes to go with it, and maybe some steamed broccoli and carrots.

so many good products out there, it is really hard to try all of
them. Then, when you really find one you love ... it's hard to
keep sampling others.

My personal favorite rub is .... HARDCORE CARNIVORE.
We use the black on virtually every piece of beef we cook.
I love this stuff and can not recommend it highly enough.
We buy the Core Pack, that comes with 3 other types of rubs also.
However, its all just personal preference. Experiment, sample and
find what you really like.

Good call. Big enough to cook indirect with large joints of meat. You will make the best turkeys you have ever had on it. Smoke roasting is the way to go with a big bird.
